L'huile d'affleurement, n'étant soumise à aucune force d'extraction, est d'apparence corsée, en parfaite harmonie entre parfum et goût.

EN. It is obtained by following the ancient method of surfacing, which consists in collecting by hand a very small percentage of oil (about 2-3%) which is spontaneously formed on the olive paste before pressing. The outcrop oil, being not subjected to any extractive force, is full-bodied in appearance, in perfect harmony between perfume and taste.
